Close to its quarter century anniversary, there is something very special about Nicolinis' that's hard to put into words. It's very elegant, the food is sumptuous and extravagantly rich yet simple and the service world class. But it's none of these - or rather the combination of this with the X factor that makes a visit so rewarding and special. Chef Vincello Cardinali has enough experience to go through the motions, but it's clear that every night is a labour of love - presentation, for example, is never less than art. The choice of fresh fish or game means that even after the regular favourites, there's always another sensation to explore, and the menu seems to go through an extraordinary number of (brilliant) reinventions every six months or so. A classic in every sense of the word.
